Pioneer Seafood Restaurants

We are opening a steak/seafood &pasta restaurant in a Historic building in Northern ,Ut any suggestions thanks
The is a very historic pioneer area in addition to being a college town and a attraction to people who enjoy the outdoors.The restaurant will be serving dry aged choice cuts of beef , fresh seafood flown in several times a week and great homemade pasta dishes. The building is well known and in the process of being renovated.
Include something to make cultural guests feel welcome, not necessarily food. In many cases people of color avoid pioneer anything (and many times that is for good reason). If you want to expand your clientelle make it obvious that you want all types of guests.
Oh. Maybe you can have vinegerettes at every table. I’ve seen it at one resteraunt before and my friend has a bottle too. They are like where you have oil in one part and vinegar in the other. Or there are ones that have three compartments. Anyhow people can add to their pasta, meat, or bread (i’m assuming you serve bread before the meal).
